A great special special occasion dip to impress the friends.  Balance out some high fiber carbs with healthy fat for the Paleo friendly recipe.

Pumpkin Hummus

Total time: 1 hour 5 mins
Serves: 4
Ingredients
  • 1 cup pumpkin, diced fresh* or canned
  • 1 Tbsp olive oil
  • ½ cup cashews
  • 1 clove garlic, finely chopped
  • 1 Tbsp lemon juice
  • 1 Tbsp olive oil
  • 1 tsp cumin, ground
  • 1/8 tsp nutmeg
  • salt and pepper to taste
Instructions
  1. Place all ingredients in the food processor until smooth.
Notes

*If using diced pumpkin, bake in oven at 200° for 40-60 minutes with oil and pumpkin only. Once cooled, then add it to the blender wit the other ingredients.
